Milk and dairy products have long been acknowledged as an important food for young animals, children and human being due to their enormous nutrient contents which are essential for growth and healthy development. Despite this, dairy products may encounter serious hazardous pathogenic microorganisms and have a role in the transmission of these to humans. These bacterial species are increasingly problematic due to the possible acquisition of virulence and antimicrobial resistance genes. Nowadays, many of the antimicrobial agents are utilized in food animal production for controlling diseases that is continuously disseminating in human food chain lead serious health problem in human and animals.
At the same time, it is also important to pay proper attention to lactic acid bacteria that are the members of the beneficial microbiota of milk and dairy product, because on the one hand they can be antagonists of pathogenic bacteria, and on the other hand they can also participate in the spread of antibiotic resistance genes.
In the frame of this PhD topic we aim to investigate the prevalence of food-borne pathogenic bacteria and LAB in dairy food, make their molecular characterization, reveal their antimicrobial resistance traits, and study their interactions.
