Fruit and vegetable based products are increasingly popular, such as fresh cuts and juices. The planned research is to collect specific information (biophysical and sensory attributes) of several fruits and vegetables to build a database. Machine learning models will be made on the basis of known recipes and used to predict key properties of new formulations. Evaluation of new products will serve as validation and feedback to machine learning. The main goal is to build a database and models to predict the acceptance of new recipes and suggest recipes to meet consumers’ expectations.
