Honey has been used in the treatment of bacterial infections and inflammations since ancient times. However, the active compounds and modes of actions responsible for the antibacterial activity are less known in case of several varietal honeys. The applicant’s task will be the wide-scale analysis of the antimicrobial activity of honeys originating from diverse geographical regions and/or botanical species, using state-of-the-art microbiological methodology. Further aims of the research include the chemical analysis of active compounds (e.g. phenolic substances) in different honey types, and clarifying the mechanisms of action contributing to the antibacterial activity of honeys.
