"Mycotoxin contamination of food and feed products is a global agricultural, health and economic problem. Aflatoxin M1 contamination in dairy products originates from the intake and metabolism of aflatoxin B1. The latter toxin is produced by mold species of the genus Aspergillus, common contaminating fungi in silage. The microbial communities of different silage types are increasingly studied in order to understand how the microbiota shapes dairy cows'' nutrition, health, their microbiome, and, importantly, silage spoilage. Our aim is to take advantage of modern culture-based and culture-independent, metagenomic methods to survey silage microbiotas and silage spoilage, and to correlate microbial community composition with mycotoxin contamination risks. Furthermore, we aim to establish and characterize a culture collection of yeasts and bacteria that show antagonistic effects on Aspergillus growth and mycotoxin production. The anticipated results may be used to define risk factors for aflatoxins entering the feed and food chain, and to develop novel antagonistic microbial strains to mitigate toxin production."
