Description of the research topic:

The research focuses on the study of qualitative and quantitative changes in the bioaccessible fractions of some major macronutrients (triglycerides, starches, simple sugars, and proteins), specifically the factors potentially affecting the functionality of enzymes involved in the digestion of these nutrients. One of the key issues in the planned research is to investigate the interactions between each macronutrient and other components present in the food to be digested. Does the microstructure formed during digestion have an effect on the digestibility of individual nutrients? Does and if so, what effect does the formulation of this digestible product have on the availability of nutrients? How can these structural changes affect nutritional value? Can the nutritional value be affected by the planned treatments and interventions during food production or food preparation? The catabolic changes of macronutrients (lipids, proteins, carbohydrates) will be studied in an internationally recognized in vitro digestion simulation model. The qualitative and quantitative changes in the bioaccessible catabolites originating form nutrients and the studied bioactives will be comprehensively monitored, using a wide variety of either instrumental analytical techniques HPLC-RID, HPLC-MS / MS, GC-FID) and other analytical methods.
