Investigation of food safety and human health risk of heavy metal burden of foods of animal origin

THESIS TOPIC PROPOSAL

Institute: University of Veterinary Medicine Budapest
veterinary sciences
Doctoral School of Veterinary Science

Thesis supervisor: József Lehel
Location of studies (in Hungarian): University of Veterinary Medicine Budapest
Abbreviation of location of studies: ÁTE

Description of the research topic:

The chemical agents released into the environment, e.g. the persistent heavy metals (Hg, Pb, Cd), can enter into the body of higher animals during the food chain without direct exposure with chemicals. Due to the biomagnification the environmental contaminants can be concentrated and accumulated through the food chain in the body.
For modelling of human health risk it is very important to know the tissue concentration of heavy metals in the organs and tissues of food-producing (livestock, wild life) animals, and whether it spells food safety and human health risk on a given area, if these animals are used for human consumption.
