Cereal grains play an important role in human nutrition because of their high energy content and diverse protein and carbohydrate composition. In addition, they contain such micro and macro components and bioactive substances as well that can contribute to maintain a healthy diet and that may reduce the risk of various disorders. From nutritional and technological point of view, the most important carbohydrates are the non-starch polysaccharides.
Certain groups of non-starch polysaccharides and oligosaccharides can vary widely in their composition and structure. The amount and ratio of monomers, the size of the molecule, and the degree and nature of substitution can vary considerably. The inter-species and intra-species genetic variability and the environmental stability (or variability) of these components are also questionable.
The new PhD student should (i) comply with the modern concept of dietary fibre analysis, (ii) study carbohydrate composition, (iii) characterize macromolecules and molecular structure and (iv) investigate some yet unexplored heteropolymers and oligomers.
