Description of the research topic:

The focus of the research is to investigate the complex effects of preparations made from the residual pomace after juice pressing on the digestion of macronutrients in the foods co-consumed with them. It is well known that the pomace residue of apples, cherries, plums, peaches and other fruits after pressing, for example, contains a number of valuable components, of which the focus of this research is on polymeric carbohydrates (e.g. pectin) and polyphenols. A number of beneficial physiological effects are associated with polyphenols consumed with food, one of which may be the development of a more favourable glycaemic response due to the inhibitory effect of certain polyphenols on amylolytic digestive enzymes (e.g. alpha-amylase). In the case of pectins, their ability to reduce postprandial blood glucose levels is also accepted. It is known that some polyphenols are able to form complex structures with carbohydrate polymers (and even other macromolecules, e.g. proteins) in foods (e.g.: in pomace). This raises the question of whether the beneficial glycaemic effects associated with polyphenols and similar effects associated with pectin are maintained or even synergistically enhanced when these components are present together in complex structures in real foods. Our research will focus on in vitro digestion simulation and tailored analytical methods to investigate, for example, the effects of complex structures on starch degradation due to nutrient interactions, while also investigating the additional effects on protein and possibly fat digestion.
