Description of the research topic:

It has been known for nearly a hundred years that plant sprouts have important implications for human health. Their protein and amino acid content varies depending on the species, but their antioxidant, microelement, and fatty acid composition can also be significant from the point of view of human nutrition and health care. Nowadays, the possibility of using sprouts also arises in the field of animal feeding.

The goal of our research is to examine whether there are differences between field and horticultural varieties and hybrids in characteristics useful for human nutrition and health. During the controlled experiments, we evaluate how the internal characteristics of the sprout change as a result of various abiotic factors – nutrients deprivation, temperature, lack of water. In the light of the phenomenon of xenohormesis, our goal is to describe the eustress state, which is considered the optimal rearing condition for a given species or breed from the point of view of a given active ingredient.
