Description of the research topic:

In public catering and mass caterer systems, several million consumers are served daily, highlighting the significance of the relevant food safety systems. New technologies (AI), and the analysis of large data sets (big data) play an increasingly significant role in food safety inspections. The future food safety management system will be based on digitalisation, but digital-based food safety management systems are rarely observed in public catering. Data generated during daily operations, regular internal audits, external inspections, the knowledge and attitude of food handlers, and consumer awareness all contribute to food safety. By digitizing these data and collecting them on digital platforms, the performance of food safety management systems becomes comparable and evaluable, and by linking it to the digitalization of public administration systems, the efficiency of regulatory inspections can also be increased. The research aims to establish a digital framework for food safety management systems in public institutions and model how the collected data can be utilized to enhance the safety of catering.
