Description of the research topic:

Honey is a complex food, which has played an important role in human nutrition and medicine since ancient times. The floral source is one of the most significant factors on the main quality parameters of honey. Pollen analysis is an effective method to determine the botanical origin of honey and to detect honey adulteration. The bioactivity of honeys is mainly due to their polyphenolic content, originating from the plant source. Using different antioxidant capacity assays, the bioactivity of honey samples can be determined with high certainty. The chemical composition depends on several factors, such as geographical origin, season and storage. Furthermore, the macro- and microelement content of honey, originating from the soil through the plant, serves as valuable quality parameters. The aim of the research is to study the connections between the above quality characteristics and different environmental effects in uni- and multifloral honeys.
