Description of the research topic:
The chemical and physical and properties of agricultural crops and food raw materials are essential for the design and implementation of food production technologies. After the annual harvesting of plant based raw materials, it is important to store them in a quality-preserving way. One of the solutions for this is drying, which reduces the water activity of the materials to a level at which the stability of the nutritional parameters can be ensured for a long time. However, it does not matter which methods (convective, microwave, etc.) and settings (drying time, temperature, radiated power, etc.) are used to reduce the moisture content. The present PhD topic focuses on their exploration and measurement, with the help of a series of experiments carried out on laboratory devices and IT processing of the measured results (e.g.: finite element modelling).
