Description of the research topic:

Celiac disease, with a prevalence of 1%, is an important public health and socio-economic issue all over the world. The triggering compounds of celiac disease are gluten proteins of wheat and prolamins of other cereals, such as rye and barley. The only treatment of this disorder is a life-long gluten-free diet. To adhere to this diet, celiac consumers have to rely on regulated food labels. Consequently, it is necessary to monitor the potential presence of gluten in the products. However, the reliability of the routinely used immunoanalytical ELISA methodology is limited by several factors, including, but not limited to the variability of toxic proteins and the methodology available for their detection in food products, most importantly in processed foods, and the lack of generally accepted reference materials. This PhD project is going to focus on the investigation of the genetic and environmental variability of prolamins in different cereals. The obtained information will be used to make analytical implications in order to improve the development and validation of ELISA methods. The results of this research are expected to be helpful for the creation of a more reliable analytical methodology in this field, which would ultimately increase the safety and quality-of-life of the celiac population.
