Description of the research topic:

The development of game meat food products has been intensified in the last decade that fulfils a new market demand. This process was largely promoted by the improvements in the legal and regulatory environment, which has stimulated the long-term investments of the legitim stakeholders in the market. The enhancement of the game meat’s share in the Hungarian food chain would be desirable from a dietary and an economic point of view, as well.
The aim of our research is to facilitate the profitable production of game meat foods that are safe and fit the needs of the consumers. We aim to assess the effects and the associations of the social, economic, technological and legal environment, the standpoint of the game meat food producing, food processing and food distributing companies, as well as the opinion of the consumers. The special domestic and European food hygiene requirements, regulations and labelling of game meat distribution, and the preferences of the Hungarian consumers in comparison with the international findings will be evaluated, and suggestions will be made aiming at the establishment of a more beneficial legal environment and a more productive professional and scientific cooperation regarding game meat foods.
