Description of the research topic:

The aims of this research are to investigate the microbiological status (mesophilic aerobic and psychrotrophic bacteria count, Enterobacteriaceae count, coagulase-positive and -negative Staphylococcus count) and somatic cell counts of raw sheep milk produced in Hajdú-Bihar County, to identify the main sources of sheep milk contamination by collecting hygiene samples from critical (HACCP) points of the farms; to determine the prevalence of mastitis caused by Staphylococcus aureus and other pathogens (i.e. Streptococcus), to examine the phenotypic and genotypic characteristics of the identified Staphylococcus aureus and lactic acid bacteria (e.g. Lactobacillus) strains.
