Description of the research topic:
The development of functional dairy foods has been promoted by the cooperation of agricultural, veterinary, medical and food science experts and nutritionists, as well as by the improvements in the legal and regulatory environment, which has stimulated the long-term investments in the market. The aim of our research is to facilitate the profitable production of functional dairy foods that are safe and fit the needs of the consumers. We aim to assess the effects and the associations of the social, economic, technological and legal environment, the standpoint of the food producing, food processing and food distributing companies, as well as the opinion of the consumers. Special attention will be paid to lactose intolerance, since the significance of this area has been increasing in the research. The domestic and European regulations will be overviewed, and suggestions will be made aiming at the establishment of a more beneficial legal environment regarding functional foods. We aim to explore the pathways that enable the incorporation of the costs incurred during the production of safe functional foods into the price of these products. Furthermore, the effects of the functional foods on the competitiveness and profitability of the dairy producers and processors will be investigated.
