Description of the research topic:
Development of functional food products has been intensified during the last decades. Besides the existing consumer needs, this process was amplified by the expansion of international trading network, contributing to a wide spread distribution of specialized goods. In the first phase, we will identify those possible and feasible supply chains that offer consumer health advantages (confirmed according to 1924/2006 EC and 432/2012 EU regulations) based entirely on domestic raw materials. In the second phase, a supply chain will be selected and analysed thoroughly from the aspect of the persistency of functional product ingredients during the different processing technologies, and also focusing on the factors possibly having an effect on food safety considering the whole production chain. These research tasks are linked to the UVMB’s EFOP 3.6.2 project.
