The heavy metal and toxic element contamination of the agricultural environment (plant-soil system) available for food material production is increasing. This trend can be dangerous. Soils are able to bound, accumulate the elements but above a certain stress level they become the source of toxicity. Toxic compounds appear in groundwater becoming absorbable for plants and getting into their vegetative and generative organs through which these compounds get into our food. By considering this it is essential for us to know the composition of our food including the figures of Arsenic and Selenium. In order to know this we need to develop and apply sensitive and accurate analytical methods.
