Some fruits and vegetables have special characteristics that contribute to the normal functioning of our body. These foods usually contain metabolites that inhibit the activity of different microorganisms, however, in the frame of this research project the aim would be the isolation of such “extremophile” bacteria from the inner tissues of fruits and vegetables (e.g. hip, sloe, cranberry, garlic, onion) that are resistant to these chemical compounds. Furthermore, antagonistic effect of the identified and well characterised isolates would be tested on spoiling microbes derived from the same foods, thus spoiling and rotting of these products could be prevented.
Isolates are going to be identified and typed by molecular biological techniques, the antagonistic metabolites will be examined by analytical methods, while the interactions are planning to be studied by co-culturing tests. The results would be valuable for food science and food industry as well.
