Description of the research topic:

The research focuses on food safety and food quality requirements, it analyses the applicability and the efficient performance of different quality assurance systems as well as their future improvement. Food safety plays important role in the EU legislation and practice, the coherent and transparent regulations are a key target factor of the community, which include the high-level quality and safety requirements from farm to fork. The research focuses on the efficient maintenance and development of food safety and quality systems, by improving knowledge and attitudes of employees as well.
In the past decades, the risks related to quality and food safety have been significantly increased. The increase in food safety risks is linked to the globalisation of trade and the acceleration of product development and technological progress. The safety of food ingredients is important for the consumers’ health and satisfaction, but the consumers are not able to check or test these elements either before or after buying the products. The loss of consumer satisfaction means a huge challenge for all players of the food supply chain; therefore, it is very important to develop special tools or methods, which would help to keep the quality and safety, level of food products at an appropriate level.
The role and perception of food safety and quality requirements in both the economy and society is increasingly valued. In parallel with economic growth, food markets, mainly in developed countries, have become saturated. The safety motives within the components of food consumption behaviour are becoming stronger, leading to greater attention to food safety, quality and ethical issues.
Our research aims to contribute to the development of quality and food safety systems in these areas and to their more effective operation in practice.

Possible research directions:
- Traceability of food products from farm to table. Supply chain of food catering systems in schools.
- Opportunities for improving quality in public catering. Impact of food handling practices of human resource in public catering on food safety.
- Opportunities of reducing plate waste by managerial decisions, Assessment of ecological footprint of public catering.
- Food safety, quality and ethical relations in food consumption behaviour.
