Description of the research topic:
Studying the properties of plant proteins and carbohydrates can be important in several ways. In the case of wheat, the aim is to study and interpret the relationship between the structure and composition of protein, starch and fibers and the rheological properties that are essential for product quality. Other plant seeds (small grains and pseudo grains, legumes), on the other hand, may offer an alternative solution for protein and energy supply and for the treatment of certain food-related disorders (e.g., celiac disease, allergies, digestive problems). In addition, during industrial (eg milling) processing, many of the health-promoting ingredients in the seeds (bioactive components, fibers) are not utilized properly or are present in by-products.
The aim of the research work can be multidirectional, for example: characterization of the composition of wheat and other grains, plant seeds; studying the composition, variability, nutritional and technological role of their macromolecules and bioactive components; development of testing (analytical, rheological and final product qualification) methods; examining the relationship between composition, structure and functionality; and the development of food products that meet special nutritional needs. The research work requires primarily biochemical, nutritional, analytical and certain physico-chemical knowledge, as well as interest in this field.
